Every culture has taken what was available, combined it with what its people knew, and created something worth passing forward.

At Philly Kel’s, we believe that story is still being written.

The Boundless Table™ is where we explore what happens when the wisdom of the old kitchen meets the imagination of the new one.

And we're not afraid to turn a few things upside down along the way.

Reimagining traditional cuisine doesn't mean erasing its history.

Quite the opposite.

Before you can intelligently reinvent a dish, technique or flavor profile, you should understand where it came from, why it developed and what made it meaningful in the first place.

That's especially important when exploring traditional cultural and religious cuisines whose foods may carry significance far beyond what's on the plate.

Our approach begins with curiosity and respect.

We want to explore ancient cooking traditions, regional techniques, heritage ingredients and generations of culinary knowledge—then ask a very Philly Kel's question:

What else can we do with this?

Sometimes the answer may be a subtle modernization.

Sometimes it's a global fusion.

Sometimes it's a completely reimagined Chef's Signature creation that makes you wonder who let the chef into the kitchen unsupervised.

Beyond Chicken, Beef & Pork

We love the classics.

But the world's pantry, butcher counter and fish market are much bigger than three proteins.

The Boundless Table™ gives us room to explore wild game meats, specialty poultry, traditional and nontraditional seafood, shellfish and underused proteins alongside familiar ingredients.

Venison can belong here.

So can goat.

Duck. Game birds. Specialty meats. Ahi. Mahi-mahi. Monkfish. Crab. Shellfish. Regional catches and ingredients that may be completely ordinary in one culture yet unfamiliar in another.

The point isn't to make food unusual merely for the sake of being unusual.

It's to expand the conversation.

An ingredient becomes interesting when we understand how people have traditionally prepared it, what techniques make it shine, and what might happen when those traditions encounter another culinary perspective.

That's where things start getting fun.

Global Flavor Doesn't Mean Global Confusion

Throwing ingredients from five countries onto one plate doesn't automatically make something “global.”

We want more discipline than that.

Global inspiration means learning from the culinary identities that developed around the world—from African and African-American foodways to the Pacific Rim, Asia, the Middle East, Europe, the Americas, island cultures and countless regional traditions in between.

Some techniques are ancient.

Others emerged from migration, scarcity, celebration, agriculture, religion, climate or cultural exchange.

Some dishes should be appreciated in their traditional form.

Others provide extraordinary foundations for thoughtful reinterpretation.

And sometimes two traditions that developed thousands of miles apart turn out to speak surprisingly compatible culinary languages.

That's the territory we want to explore.

The Old Kitchen and the Modern Kitchen Can Share the Same Stove

Modern culinary technology gives today's cook extraordinary tools.

But newer doesn't automatically mean better.

Long before immersion circulators, digital thermometers and precision ovens, cooks learned to control fire, smoke, fermentation, salt, time, moisture and temperature through experience passed from one generation to another.

There is tremendous intelligence in those traditions.

The modern kitchen shouldn't automatically replace them.

It can learn from them.

Sometimes we'll look backward.

Sometimes forward.

Frequently, we'll do both at once.

Because culinary innovation doesn't require us to choose between grandmother's kitchen and tomorrow's kitchen.

Pull up another chair. There's room for both.

Reimagining More Than Recipes

The same philosophy extends beyond individual dishes.

At Philly Kel's, we're exploring and developing:

Chef's Signature menus. Culinary collections. Sauces. Marinades. Brines. Glazes. Cooking techniques. Seafood preparations. Wild-game applications. Desserts. Global flavor combinations. Digital cookbooks. Home-cook culinary education. Private-chef experiences.

Sometimes we'll dismantle a familiar idea and rebuild it.

Sometimes we'll take something nearly forgotten and give it another stage.

Sometimes we'll leave a classic almost untouched because generations of cooks already figured out something brilliant.

Knowing when not to reinvent something is part of creativity too.

Who Gets to Reinvent the Kitchen?

We also believe culinary innovation shouldn't have an age limit, physical stereotype or predetermined résumé.

Philly Kel's is built from an African-American, disabled and senior-owned perspective—and we aren't interested in treating those identities as limitations on creativity or entrepreneurship.

Experience matters.

Adaptation matters.

Accessibility matters.

And sometimes having to approach a kitchen, business or problem differently produces ideas that conventional thinking would never discover.

The culinary world has always evolved because somebody challenged what everybody else considered normal.

We're comfortable with that assignment.

We'll explore familiar proteins—and venture far beyond them.

We'll meet the people, businesses and ideas developing throughout the Philly Kel's culinary family.

And every once in a while, we'll probably create something that makes somebody say:
